Vegan Potato Salad

Here's a simple tasty potato salad for summer meals. 
Ingredients:
  • ​5-6 new potatoes, scrubbed skins, diced
  • 2 stalks celery, diced
  • 2 green onions, chopped
  • 4 sweet pickles in juice, diced
  • 1/4 cup VEGENAISE (vegan mayonnaise)
  • 1 - 2 tsp. yellow mustard
Method:
  1. ​Scrub potato skins and wash.  Chop into cubes.  Boil for 30 minutes or until tender.  Rinse and cool.  I like to prepare my potatoes the night before so they have ample time to cool and be stored in fridge so the salad is ready to eat after mixing.
  2. Chop celery, onions and pickles and add to the potatoes.
  3. Add 1/4 cup sweet pickle juice, vegenaise and mustard and mix together with a big spoon until well combined.  
  4. Store in the fridge in a glass container or serve straight away.
