Faux Parmesan Cheese

Here's a great way of adding texture and flavor to top pastas and salads with the goodness of raw cashews. Cashews are a good source of iron, copper, manganese and zinc.  This is a dairy free option and there are no additives or preservatives.  It's RAW so all the vitamins and minerals are intact.
Ingredients:
  • ​1/2 cup raw cashews
  • 1 garlic clove, minced
  • sea salt to taste (I did 10 turns on my salt mill)
​Add ingredients to a blender or food processor and pulse slightly until you get the consistency of parmesan cheese.  Don't pulse too long or you'll end up with cashew butter.  This keeps well in the fridge stored in a glass container for about 3 months.
